Kiwi Parfait

Appropriate for all Freedom meal plans solely
Elements:
1 small Kiwi
6 oz. Low-Fats Yogurt (or 4 oz. Greek Yogurt)
¼ cup Quinoa, cooked
Sprint of Cinnamon (to style, non-compulsory)
Lime Zest
1-2 drops Vanilla Extract
½ tsp. recent Mint, chopped
Preparation:
Puree half of the Kiwi and put aside.
In a small bowl, mix the yogurt, lime zest, vanilla extract and cinnamon (non-compulsory).
Fold the pureed kiwi into the yogurt combination. Layer the yogurt, quinoa, and remaining diced kiwi in a small glass and garnish with chopped mint.
