In a small bowl, thoroughly mix the eggs with 100 g of smooth quark to create a smooth liquid base. Then add fine spelt flour, vanilla protein powder for an extra serving of protein, baking powder (which will make the batter beautifully fluffy when frying), and don’t forget a pinch of salt, which perfectly enhances the overall sweet flavour. Carefully mix everything together into a thicker, lump-free batter.

Peel the bananas and cut them into thicker slices (approximately 1.5 to 2 centimetres wide) so that they do not fall apart during coating and subsequent handling in the pan. Coat each banana slice thoroughly on all sides in the prepared batter.

Lightly spray a hot pan with rapeseed oil spray to prevent the dessert from sticking, then fry the banana slices on both sides until golden brown.

Ideally, serve the fried bananas in batter while still warm. They taste great with another portion of smooth quark, which can be sweetened to personal preference with vanilla flavour drops. For the perfect visual finish, lightly dust the whole treat with powdered sugar.
